The Pollo Rey concept is healthy, tasty, quick service food which offers the consumer a good price value, while providing both an attractive, pleasant atmosphere for sit down dining or convenient take-out dining. While each store is consistent in the design and layout of the "back of the counter" operational areas, the public area is designed to convey a authentic Mexican Cantina feel. The "chain" aspects of consistency of design is de-emphasized in favor of a more local "Neighborhood" ambiance. The massive heavy-duty rotisserie, complete with twenty-four chickens roasting over an open mesquite fire becomes the aromatic focal point of each store. The smell and warmth emanating from the rotisserie are integral parts of the decor conveys the image of freshness.
